Production notes
The work begins in the vineyard. To produce a sulfite-free cuvée, the grapes must be perfectly healthy. Ripeness is monitored through berry tastings and regular analyses, allowing us to determine the optimal harvest date. Winemaking is very traditional, with the exception that we do not use SO2. The grapes are destemmed and crushed before being placed in temperature-controlled tanks for a cold pre-fermentation maceration at 7°C. For 10 days, the temperature is then maintained between 23 and 25°C. Extraction is carried out through controlled pump-overs based on daily tastings. Pressing takes place after 15 to 20 days of maceration, and the wines are transferred to tanks for malolactic fermentation. Finally, the wine is bottled. Aged for 16 months in tanks.
Tasting notes
The first aromas of red fruit and a touch of spice are revealed on the nose. On the palate, the generous flavors unfold fully, offering a truly indulgent sensation with notes of cherry, blackberry, and plum.
