Production notes
Vacuum fermentation in temperature-controlled stainless steel tanks, immediately followed by distillation to prevent harmful secondary fermentation. 100% artisanal distillation in steam stills. Benito Nonino’s ongoing research and innovation require the removal of the heads and tails, allowing for the selection of the purest part of the grappa: the heart. The Nonino distilleries distill the pomace immediately after fermentation, right at the time of harvest, to preserve the precious organoleptic characteristics of the original grape variety and thus obtain a grappa of the highest quality. It is aged for six months to a year in stainless steel tanks.
Tasting notes
Amber. Elegant, fresh, and light, with a hint of sweetness reminiscent of the delicate scent of acacia blossoms and Golden Delicious apples.
