Angélica Sur vineyard: Silty alluvial soil with dense gravel on the surface. La Pirámide vineyard: Soil of alluvial origin, clayey on the surface with pebbles at the bottom.

Production notes

Fermentation takes place in concrete eggs, small stainless steel tanks, and French oak barrels, at a temperature of 26 to 28°C for approximately 12 to 18 days. Total maceration lasts approximately 18 to 22 days. Aging occurs in French oak barrels for 18 to 24 months, using first, second, and third-use barrels.

Tasting notes

The wine is an intense ruby ​​color. The bouquet opens with ripe black fruits: blackcurrant, blackberry, sometimes black plum or black cherry. Concentrated black fruits, with notes of blackcurrant and blackberry, then layers of spice, cedar, wild herbs, perhaps a touch of cocoa or licorice in the background.
