Product notes
The soils are alluvial deposits of decomposed granite from the slopes of Table Mountain. They are deep, well-drained, and have a high water retention capacity. All the grapes are grown on Constantia Uitsig, which benefits from a Mediterranean climate with cool sea breezes from False Bay during the growing season.
Production notes
The grapes are hand-harvested, crushed, and destemmed before the juice is clarified and inoculated with yeast. Fermentation takes place in a combination of stainless steel tanks and concrete fermenters. After fermentation, the wine is aged for three months on its lees before the final blending of the different components.
Tasting notes
This Chardonnay offers distinctive citrus notes of kumquat and grapefruit on the nose, leading to subtle aromas of white peach and dried pear. This fruity bouquet continues on the palate, where ripe pear flavors provide a characteristic, full-bodied sensation, developing into a delicate ruby grapefruit finish.
