Production notes

Made from two semi-sweet varieties with a lovely acidity—the Melba and Paulared apples—which give this dry cider its distinctive character. We use champagne yeast, which ferments slowly to achieve an extremely low sugar content, resulting in a stable, high-quality product that ages well. Fermentation is completed in the bottle.

Tasting notes

There are two ways to enjoy this cider: for the more adventurous, mix it lightly with the sediment to experience the full complexity and raw flavor of the product, or leave the sediment at the bottom for a lighter taste. On the palate, it offers a clean taste of fresh, tart apples, finishing with a crisp, refreshing aftertaste. Unlike filtered cider, this one truly retains all the apple’s aromas, thanks to the yeast that has broken down the sugars.
