Product notes

Benefiting from its proximity to the Pacific Ocean, the Casablanca region enjoys a cooler climate than the inland areas, an advantage for producing white wines that retain a certain freshness.

Production notes

Hand-sorting and selection of the berries Various extraction methods were employed: Pressing of whole-cluster and destemmed grapes, followed by cold maceration for a few hours Transfer to settling tanks for 24-48 hours Selected yeasts - 'Cereviceae' Alcoholic fermentation for 25 days at 13-14°C Fermentation (35%) in barrels with varying toasting levels Addition of sulfur to 75% of the blend Completed malolactic fermentation for the remaining 25% Aging in French oak barrels - previously used for 1, 2, or 3 vintages - for 12 months

Tasting notes

A wine of a rather intense straw yellow color. Notes of fresh tropical fruits such as peach, papaya, and grapefruit blend beautifully with vanilla and the sweet spices of oak. On the palate, the wine is fresh, medium-bodied, and pleasantly acidic, with notes of yogurt and dulce de leche that smooth the wine and give it structure.
